Chocolate Almond Zucchini Bread

Andrea use to make this recipe, she thought it was great with chocolate chips added....I liked it without the extra chocolate.

3 eggs, beaten
1 c. sugar
1 c. packed brown sugar
1 c. vegetable oil
1 tsp. almond extract
2 c. grated zucchini
2 c. flour
2 ounces unsweetened chocolate squares
1 tsp salt
1 tsp cinnamon
1/2 tsp. baking powder
1 tsp. baking soda
1 c. slivered or sliced almonds

Add sugars and oil to the eggs. Melt chocolate; cool slightly.  Add zucchini & almond extract; add chocolate.  Preheat oven to 350 degrees.  Mix dry ingredients together and stir into wet ingredients. Fold in almonds (if desired)  Bake in 2 loaf pans that have been spayed with pam and dusted with flour. Bake for 50-60 minutes. Cool in pans for at least 15 minutes, remove from the pan and cool on rack.

    I substituted applesauce for the oil and it made it really moist. Good stuff.

  2. Funny that you posted this. I actually use this same recipe with bananas and just plain zuccini... without any chocolate... so it's just a normal bread recipe... and it gets raving reviews every time.
